We grow baby ginger in our high tunnel and harvest it before it reaches the dry, fibrous mature stage that you see in grocery stores. Ginger is a tropical plant, so we grow it all season in the warm tunnel and then have a narrow harvest window in the late fall, before a hard frost ends the season. Get it while you can!
